How is everybody’s week going? My only report for the week is that I have eaten at least my body weight in cheesecake and other desserts, so now I am feeling positively sluggish! (Not that I didn’t enjoy every bite of said desserts!)
However, I do feel like bit of a break from the heavy desserts. Which is why, today, I bring you Healthy Apple Muffins. Grain free, dairy free, refined sugar free and Paleo. Though eating these you would never know!
I also wanted to avoid the mid week slump. You know what I’m talking about? The time in the week where you are tired of work and you just want to relax. Some of you may even eat “healthy” through the week so perhaps you are craving a something a little sweet.
What amazed me about these muffins was how easy they were to make. You just mix the dry ingredients and wet ingredients separately and then throw them together before putting them in the muffin tray, pop them in the oven for 20 minutes and BAM! They’re done.
At first I was a little worried they wouldn’t rise and they would turn out as weird little clumps or a strange texture but they didn’t! Instead you will find lovely and soft, sweet muffins with a lovely flavour from the cinnamon and apple. Perfect for Autumn and perfect for playing a little game with your friends and family. I dare you to serve these and see if they notice they’re not full of butter and sugar. I bet they won’t realise!
So whether you are feeling a little sluggish, are falling into the midweek slump, you have a little sweet craving or you just want to try a healthier baking option, these Healthy Apple Muffins are definite must try!
- 1/2 Cup Coconut Flour
- 2 tsp Cinnamon
- 1/4 tsp Mixed Spice
- Pinch Cloves
- 1/4 tsp Salt
- 3 Large Eggs
- 1/4 Cup Unsweetened Apple Sauce
- 1/4 Cup Coconut Oil, Melted
- 2 Tbsp. Honey
- 2 Tbsp. Maple Syrup
- 1 tsp Vanilla Extract
- 1 Apple Finely chopped
Preheat the oven to 180°C (350°F) and line a muffin tray with 8-10 muffin liners.
Place all the dry ingredients into a large bowl and mix together.
Melt the coconut oil and place in a bowl with all the wet ingredients and mix thoroughly together.
Mix the wet ingredients into the dry and mix well.
Stir in 2/3 of the chopped apple.
Pour into the muffin cases until each one is 2/3 full.
Sprinkle the remaining apple over the top of each one.
Bake for 20 minutes or until a skewer inserted comes out clean.
Allow to cool for 10 minutes before serving
You can use an electric mixer to mix the batter.
If not using an electric mixer, you may need to use a whisk as the coconut flour will clump up when the wet ingredients are added.
This makes 8-10 muffins depending on the size and shape of your muffin tray.
