Only seven more sleeps until Christmas! I would lie and say I’m super excited and have been counting down the days but honestly my mind is still back in like October so to me it really doesn’t feel like Christmas should even be here yet! This year is going way too fast and needs to slow down. Like seriously, time needs to stop please.
Anyway on to today’s recipe. Berry and White Chocolate Muffins. Perfectly soft, dense and fluffy muffins with bursts of berries and white chocolate. These are amazing straight out of the oven or heated up so the white chocolate is all melty.
This is one of those recipes that I first tried years ago because I was asked to do so and I reluctantly agreed. At the time I absolutely hated even the thought of white chocolate and anything with berries was immediately deemed “healthy” in my mind so why would I want to eat that?! (I must admit, my mind still kind of works this way….)
However, everyone at the gathering these muffins were made for, absolutely adored these muffins and didn’t stop commenting on the flavours and the textures. Since I refused to try them I smiled and nodded at the compliments.
