Sorry for my absence on social media and the blog lately. I have been super buy with assignments and spent the weekend moving house which resulted in no internet for a day of two.
To make it up to you, I have these KitKat Cookie Bars complete with a video tutorial!
When I say these cookie bars will be your new favourite, I mean it! I only made them last week and I’m obsessed.
The cookie bar base is my classic cookie pie recipe that I use for most of my cookie bars and pies as it yields gorgeous, soft and chewy cookie bars EVERY. SINGLE. TIME!
There are two big blocks of KitKats in these cookie bars so you know they are going to be amazing!
We only add the KitKats on top of the cookie bars once the bars are nearly done baking as we only want them to melt slightly and crisp up a touch without burning.

KitKat Cookie Bars are soft and chewy cookie bars for a
gooey middle filled with chocolate chips and a KitKat filling. We top the bars
with KitKats after baking for the ultimate KitKat lovers sweet treat!
- 200 g Butter, Partially Melted (1 Cup)
- 3/4 Cup Brown Sugar
- 1/2 Cup Sugar
- 2 Large Eggs
- 2 tsp Vanilla Extract
- 2 and 1/4 Cups All Purpose Flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 Cup Chocolate Chips
- 340 g KitKats
Preheat the oven to 180°C (350°F) and grease a 7"x11" baking tin with butter or non stick cooking spray.
Beat the butter, brown sugar and sugar together.
Add in the eggs and vanilla extract and beat until smooth.
Add in the flour, baking powder and baking soda and mix. Finally add the chocolate chips and mix together.
Spread half of the chocolate chip cookie dough in an even layer in the base of the prepared pan.
Place 170g of the Kitkats on top of the cookie bar base.
Top with the remaining cookie dough in little blobs.
Bake for 20 minutes. Remove from the oven and top with the remaining KitKats and place back in the oven for 5-10 minutes. The top and sides will be golden and set but the middle will have crumbs attached to a skewer inserted in the middle.
