Mini Egg Cookie Pie or cookie cake depending on what you like to call them. A vanilla cookie pie filled with chocolate chips, Easter eggs and Easter mini eggs and topped with a rainbow coloured white chocolate drizzle.
O. M. G. YOU GUYS! Look at this beauty! The gorgeous pastels, the speckled mini eggs, the chewy and soft cookie you know is hiding underneath… THIS is what you call an Easter showstopping dessert!
Jumbo Easter Egg Cupcakes are a vanilla cupcake filled with a marshmallow Easter egg baked inside, topped with chocolate frosting and finished off with broken pieces of chocolate Easter bunnies and Easter eggs.
Really, these should be called exploding cupcakes, or VOLCANO cupcakes! Yes volcano cupcakes. I like it. It has a certain ring to it don’t ya think?
Seriously though, the cupcakes exploded in the oven. The marshmallow Easter egg I placed in the center of each exploded out the top and melted all over the cupcakes. Not what I was hoping for but delicious none the less.
It’s Saturday! Let’s celebrate the weekend with something completely showstopping, over-the-top and oh so decedent.
This is the last day of Easter Week here on LCB and we’re going out with a bang. Easter Freak Shake kind of a bang. That’s right, homemade Easter chocolate ice cream that is then turned into a freak shake with mountains of homemade chocolate sauce and various Easter eggs and treats.
I actually made this LAST Easter! I tested the recipe, took the photos and filmed all of this a year a go and actually managed to keep it a secret from you. You can only imagine how hard it has been to not get over excited and share this early.
With the beginning of the Easter holiday starting tomorrow, I thought I would sneak in one more Easter recipe for you. They are what I affectionately call Messy Easter S’mores.
I am so excited for Easter and all the chocolate I can will eat! Not that I don’t eat a lot of chocolate on a regular basis anyway, but this holiday gives us all an excuse to go a little crazy on the chocolate right? Well, that’s what I tell myself…… Anyway, back to the recipe at hand.

As a child the “Easter Bunny” would always bring leave my Easter Eggs in a basket with a book. Receiving a book with my eggs was a tradition that I absolutely loved. Now, as an adult big child, I will sometimes reflect on that and find that I really cherish those memories. Funny how small traditions for child can make such an impact later on in life.
Easter as a child is great in so many ways. Chocolate, time off school, family time, and did I mention CHOCOLATE!!! The only way Easter could have been made better was if Easter Eggs came in delicious edible baskets.
