Ingredients
  • 1 Cup Dried Christmas Cake Fruit Mix
  • 250 g Arrowroot Biscuits (Or Graham Crackers)
  • 1/2 Cup Walnuts, Chopped
  • 1/2 Cup Sugar
  • 1/2 Cup Water
  • 2 Tbsp. Cocoa
  • 50 g Butter
  • 250 g Dark Chocolate
Topping;
  • 150 g White Chocolate Melted
  • 1-4 Glace Cherries
Instructions
  1. Crush the arrowroot biscuits and add the dried fruit and walnuts in a large bowl.
  2. In a saucepan melt the sugar, water, cocoa, butter and dark chocolate together until smooth.
  3. Pour over the dry ingredients and mix together.
  4. Line a small bowl with cling wrap and pour the mixture into the bowl and press in evenly.
  5. Allow the pudding to set for at least an hour but preferably two.
  6. Once set, pull out the pudding and peel of the cling wrap.
  7. Melt the white chocolate and pour over the top of the pudding in a Christmas pudding type of design.
  8. Top with the glace cherries and serve!
