Ingredients
Base;
  • 125 g Digestive Biscuits or Graham Crackers, Crushed
  • 60 g Butter Melted
Chocolate Chip Cookie Dough;
  • 100 g Butter, Partially Melted (1/2 Cup)
  • 1/3 Cup Brown Sugar
  • 1/4 Cup Sugar
  • 1 Large Egg
  • 1 tsp Vanilla Extract
  • 1 Cup and 2 Tbsp. All Purpose Flour
  • 1/2 tsp Baking Powder
  • 1/2 Cup Chocolate Chips
  • 5 Marshmllows Chopped
  • 1/3 Cup Chocolate Chips
Brownie Layer;
  • 100 g Dark Chocolate
  • 80 g Butter (1/3 Cup)
  • 1 Large Egg
  • 1/2 tsp Vanilla Extract
  • 1/2 Cup Sugar
  • 3 Tbsp. Cocoa Powder
  • 3/4 Cup All Purpose Flour
  • 16-20 Marshmallows
Instructions
  1. Line an 8"x8" baking pan with baking paper and preheat the oven to 160°C (325°F).

  2. Melt the butter and mix with the crushed digestive biscuits.

  3. Press into the base of the prepared pan and place in the fridge while you make the cookie layer.

Cookie Layer
  1. Beat the super soft or partially melted butter, brown sugar and sugar together.

  2. Beat in the egg and vanilla extract.

  3. Mix in the flour, baking powder and chocolate chips.

  4. Spread over the crushed biscuit base in an even layer and sprinkle over the 1/3 cup of chocolate chips and chopped marshmallows.

Brownie Layer
  1. Melt the butter and chocolate together.

    Pour the mixture over the partially baked peanut butter layer.

  2. Beat the egg, sugar and vanilla extract until light and fluffy.

  3. Mix the chocolate mixture through the eggs.

  4. Mix in the cocoa, followed by the flour.

  5. Pour the mixture over the cookie layer and place in the oven for 10 minutes.

  6. After 10 minutes, remove from the oven top with the 16 or 20 marshmallows and place back in the oven for a further 10-15 minutes.

  7. The marshmallows should be lightly golden and the middle will only slightly wobble but the sides should be set.

  8. Allow to cool completely for nice clean pieces otherwise dig in with a spoon!
