Caramelitas are buttery and chewy oat bars with a layer of chewy caramel and chocolate chips. Sweet, buttery, chewy and melty!
Preheat oven to 180°C (350°F) and line a 9"x9" pan with baking paper and set aside.
In a saucepan place the butter, brown sugar and milk in a saucepan on a medium heat and bring to the boil.
Boil for 5 minutes and take off the heat and place in the fridge to cool completely while you make the oat bars.
Melt the butter and mix with the brown sugar and vanilla extract.
Stir in the flour, oats and baking soda and stir.
Press half the mixture into the base of the prepared pan and bake for 10 minutes.
Top with the caramel sauce and sprinkle over the chocolate chips.
Sprinkle over the remaining dough and return to the oven for 25 minutes or until the edges are golden.
Allow bars to cool completely in the pan before slicing and serving, to allow the caramel to set.
