Ingredients
Custard;
  • 1/2 Cup Custard Powder
  • 1/3 Cup Sugar
  • 3 and 1/2 Cups Milk
  • 1 Tbsp. Vanilla Extract
Apple Crumble;
  • 190 g Butter, Melted (3/4 Cup)
  • 2 Large Eggs
  • 1 and 1/4 Cups Borwn Sugar
  • 2 and 1/2 Cups Oats
  • 1/2 Cup Desiccated Coconut
  • 2 and 1/2 Cups All Purpose Flour
  • 2 tsp Baking Powder
  • 2 tsps Cinnamon
  • 4 Large Granny Smith Apples, Skin on and Sliced thinly and in small pieces
  • 1 tsp Cinnamon, Extra
  • 2 Tbsp. Water
  • 1/2 tsp Vanilla Extract
Instructions
Custard;
  1. Add the custard powder, sugar and 1/2 cup of the milk into a large saucepan over a low to medium heat and stir with a whisk.

  2. Allow the mixture to slowly heat. After five minutes add the remaining milk and slowly bring to the boil stirring constantly.

  3. This may take some time but its worth it in the end as the custard will be silky and smooth.

  4. Once the custard thickens, take off the heat and stir through the vanilla extract.

  5. Set aside to cool and thicken while you make the rest of the apple crumble.

Apple Crumble;
  1. Core and chop the apples. Add two of the apples, extra cinnamon, water and vanilla extract to a large saucepan. 

  2. Heat over a medium heat until the apples are very soft, about 20-30 minutes.

  3. Remove from the heat and add the remaining chopped apples and stir through. Allow to cool as you make the crumble.

  4. Preheat oven to 180°C (350°F) and grease or line a 9"x13" baking tin with baking paper.

  5. Place the brown sugar in a bowl and mix in the melted butter.

  6. Add in the eggs and mix.

  7. Add the flour, oats, coconut, baking powder and cinnamon and mix until all combined.

  8. Press 2/3 of the mixture into the base of the prepared pan.

  9. Top with the apples and spread in an even layer.

  10. Pour over the custard and then sprinkle over the remaining crumble mixture and place in the oven bake for around 30 minutes. The top should be a light golden colour and the custard will be nearly set.

  11. Allow to cool completely before slicing. I like to cool mine in the fridge so the custard sets.
