Prepare 8-10 4"x2" round ramekins. You can use smaller or larger depending on what you have on hand or your needs.
Crush the Oreos and mix with the melted butter.
Press the Oreo crumbs in to the base of each ramekin, aiming for even distribution between them all.
Place on a tray in the fridge while you make the filling.
Cheesecake;
Beat the softened cream cheese until no lumps remain.
Beat in the icing sugar and vanilla extract and beat until smooth.
Pour in the whipping cream and beat it until the mixture become stiff.
Dollop the cheesecake mixture into each ramekin until they are all nearly full.
Smooth over the top of the cheesecakes and gently whip away any excess from the sides of the ramekins with a clean, damp dish towel or cloth. Place in the fridge for an hour.
Decorating;
Melt the dark chocolate and place in an icing bag or (I use a zip lock bag) and snip a very small hole at the base.
Start with the eyes, pipe two eyes near the top of the cheesecake followed by nostrils and then finally draw a smirk with zigzags over the mouth to resemble Jack Skellington.
