Line a 9"x9" square baking tin with non stick paper and set aside.
Place the coconut oil and chocolate in a saucepan and melt.
Once the chocolate is nearly melted, add in the peanut butter and honey and mix until all combined and smooth.
Take off the heat and add the vanilla extract, cinnamon and oat flour and mix.
The mixture will be tough and will clump together.
Place in the prepared pan and spread evenly.
Place in the fridge for at least 30 minutes to set and then slice.
Store in the fridge as they begin to melt at room temperature.
Notes
Ensure you use vegan chocolate chips and maple syrup if you want these completely vegan, Use good quality, pure peanut butter, maple syrup and vanilla essence if you want these as healthy and unrefined as possible. If you don't have oat flour, just process some oats in a food processor or blender until they become a flour like consistency.Adapted from Cookie and Kate
