Homemade, safe to eat cookie dough rolled into a ball and surrounded by a rich and fudgy brownie and covered in melted chocolate to create a large truffle or bite!
Preheat the oven to 180°C (350°F) and line a 9"x13" baking pan with baking paper and set aside.
Melt the dark chocolate and butter together and allow to cool slightly.
Beat the eggs, vanilla extract, sugar and brown sugar together until fluffy.
Pour in the chocolate mixture and mix together.
Add in the cocoa and flour and fold through until just combined.
Pour into the prepared pan and place in the oven for around 20-25 minutes or until a skewer inserted in the middle comes out with a few wet crumbs attached.
Allow to cool completely while you make your cookie dough.
Cookie Dough;
Beat the super soft or partially melted butter, brown sugar and sugar together.
Beat in the vanilla extract and milk.
Mix in the flour and chocolate chips.
Line a tray with non stick paper and roll your cookie dough into balls. 12 balls for large bites, 16 for medium sized bites or 24 for small bites.
Place in the fridge for 20-30 minutes or until your brownies have finished cooling completely.
Assembling;
Slice the brownie into however many balls of cookie dough there are. (12,16,24). Flatten a piece of brownie in the palm of your hand and place a cookie dough bite into the middle of the brownie.
Wrap the brownie around the cookie dough ball and place back on the tray.
Repeat with remaining bites.
Melt the chocolate and dip each cookie dough brownie bite into the chocolate and then place back in the fridge for at least 30 minutes or until the chocolate is completely set.
Notes
*You can replace the flour with oat flour or heat treat your flour by placing it in the oven at 180°C for 10 minutes.
