Place the dates and water in a saucepan over a medium heat and simmer until the dates soften and the water is absorbed.
Place the dates, honey, cocoa, almonds, vanilla and salt into a food processor or large blender and blend until combined and smooth.
Line a tray or large plate with non stick baking paper and roll the mixture into 16-18 balls and place in the freezer for 30 minutes or in the fridge for an hour before serving.
Store in an airtight container in the fridge for up to a week.
