Preheat the oven to 180°C (350°F) and line a baking tray with baking paper and set aside.
Beat together the coconut oil, coconut sugar, apple sauce, almond milk and vanilla extract together until well combined.
Add in the gluten free flour, baking soda, salt and chocolate chips and mix through until well combined.
Roll into balls and place on the prepared baking tray, leaving a few inches between each cookie and place in the oven for 10-12 minutes. The middle will look slightly under-baked but will harden and become chewy when they cool.
