Perfectly soft, dense and fluffy muffins with bursts of berries and white chocolate. These are amazing straight out of the oven or heated up so the white chocolate is all melty.
Preheat the oven to 180°C (350°F) and line a muffin tin with muffin liners.
In a bowl, beat the butter and castor sugar together.
Beat in the eggs and vanilla extract. Then beat in the milk.
Fold in the flour, berries and white chocolate chips. (If using frozen berries toss them through 1 tablespoon of flour to ensure they don't sink to the bottom of the muffins.)
Be sure to NOT over mix.
Spoon into the muffin cases and place in the oven for 15 - 25 minutes.
When a skewer inserted in the center comes out clean they are done.
Notes
Don't over mix or the muffins will come out tough. If your berries are large, chop them in half or quarters.
