Caramel Date Oat Bars
The Caramel Date Oat Bars. These have a lightly spiced, coconut and oat crunchy base and top with a layer of gooey dates and homemade buttery caramel in the middle.

Instructions
Chop up the dates finely and place them with the water in a saucepan over a medium heat to bring to the boil.
Once the mixture is boiling, turn down the heat to a simmer for 15 minutes or until nearly all the water has soaked into the dates.
Now make the caramel.
Place the butter, golden syrup and condensed milk in a saucepan and bring it nearly to the boil then remove from the heat.
Stir in the vanilla extract and set aside.
Preheat the oven to 180°C (350°F) and line an 8"x8" baking pan with baking paper.
In a bowl mix the melted butter and brown sugar together.
Add in the egg, flour, oats, coconut, baking soda and cinnamon and mix until all combined.
Press half of the mixture into the base of the prepared pan.
Spread the date mixture in an even layer over top.
Spread the caramel mixture over top of the dates.
Top with the remaining oat mixture and place in the oven for 20-25 minutes. The top and sides will be a lovely golden brown.
Wait until cool to slice into neat slices.
