Instructions
Caramel Sauce;
Place the butter and brown sugar in a saucepan on a medium to high heat.
Once the butter has melted, add the milk and bring to the boil.
Boil for at least 2 minutes before removing from the heat and set aside to cool while you make the peanut butter cookie dough.
Peanut Butter Cookie Bars
Preheat the oven to 180°C (350°F) and line an 8"x8" baking pan with baking paper and set aside.
Beat the peanut butter, butter, brown sugar and sugar together until creamy.
Beat in the egg and vanilla extract.
Beat in the flour, baking soda, salt, white chocolate and chocolate chips and mix until all combined.
Press half of the mixture into the prepared pan. Pour over the salted caramel sauce and then top with the remaining dough in an even layer.
Bake for around 25-30 minutes. The top and sides will be lightly golden and the middle will only have a slight wobble.
