Caramel Peanut Butter Slice is a gooey, chewy, buttery and oh-so-delicious peanut butter cookie bar stuffed with caramel sauce and speckled with white chocolate and chocolate chips.
You guys! If you love peanut butter, these bars are for you! When I say these are peanut butter cookie bars, I mean they are PEANUT BUTTER cookie bars. They are sweet and filled to the brim with peanut butter goodness.
To make these cookie bars or slice even better I added two types of chocolate. I was just going to add white chocolate as I feel the peanut butter and white chocolate combination just POPS, I thought 'what the heck' and added regular chocolate because why not?
Now I am obsessed with peanut butter and caramel together. I feel these flaovurs just compliment each other and I'm not a caramel fan. I of course used my homemade caramel sauce recipe (you can make it salted or not). You can substitute this sauce with a store bought caramel sauce but the sauce really does come together in a flash so I recommend making your own.
Like all my peanut butter based recipes, I use an all natural peanut butter as I prefer all natural but you can use a regular peanut butter if you prefer or if that's what you have on hand, just ensure the peanut butter is smooth not crunchy.
I love these bars so much that I doubled the recipe and made a big batch all for myself. Greedy? Yes. Worth it? OH YES! This recipe calls for an 8"x8" baking pan but if you double the recipe I baked mine in a 7"x11" pan.

Ingredients
Caramel Sauce;
- ¼ Cup Butter (55g)
- ½ Cup Brown Sugar (80g)
- 3 Tbsp. Milk
Peanut Butter Cookie Bars
- 1 Cup Smooth Peanut Butter (250g)
- ⅓ Cup Butter, Softened (75g)
- ⅔ Cups Brown Sugar (130g)
- ¼ Cup Sugar (50g)
- 1 Large Egg
- 2 teaspoon Vanilla Extract
- 1 and ½ Cups All Purpose Flour (210g)
- 1 teaspoon Baking Soda
- ⅛ teaspoon Salt
- ½ Cup White Chocolate Chips (90g)
- ⅓ Cup Chocolate Chips (Optional) (70g)
Instructions
Caramel Sauce;
- Place the butter and brown sugar in a saucepan on a medium to high heat.
- Once the butter has melted, add the milk and bring to the boil.
- Boil for at least 2 minutes before removing from the heat and set aside to cool while you make the peanut butter cookie dough.
Peanut Butter Cookie Bars
- Preheat the oven to 180°C (350°F) and line an 8"x8" baking pan with baking paper and set aside.
- Beat the peanut butter, butter, brown sugar and sugar together until creamy.
- Beat in the egg and vanilla extract.
- Beat in the flour, baking soda, salt, white chocolate and chocolate chips and mix until all combined.
- Press half of the mixture into the prepared pan. Pour over the salted caramel sauce and then top with the remaining dough in an even layer.
- Bake for around 25-30 minutes. The top and sides will be lightly golden and the middle will only have a slight wobble.
