I hope you enjoy KitKats as much as I do because today you have soft and chewy chocolate chip cookie bars filled to the brim KitKats.

Today's recipe comes complete with a video tutorial!
The cookie bar base is my classic cookie pie recipe that I use for most of my cookie bars and pies as it yields gorgeous, soft and chewy cookie bars EVERY. SINGLE. TIME!

How to make the KitKat Cookie Bars
The base recipe for the cookie dough is very easy. One bowl is all that is needed. The key is to not completely melt the butter. You want partially melted butter which means that lumps of butter should remain.
If you do accidently melt the butter completely (I know, it happens), You can add 2 extra tablespoons of flour to counteract the extra liquid.
We also use two big blocks of KitKats in these cookie bars so you know they are going to be amazing!
We add KitKats on top of the cookie bars but only once the bars are finished baking. We add them as soon as the cookie bars are out of the oven so they melt slightly without burning.

KitKat Cookie Bars

Ingredients
- 1 Cup Butter, Partially Melted (220g)
- ¾ Cup Brown Sugar (130g)
- ½ Cup Sugar (100g)
- 2 Large Eggs
- 2 teaspoon Vanilla Extract
- 2 and ¾ Cups All Purpose Flour (350g)
- 1 teaspoon Baking Powder
- ½ teaspoon Baking Soda
- 1 Cup Chocolate Chips (180g)
- 340 g KitKats
Instructions
- Preheat the oven to 180°C (350°F) and grease a 7"x11" baking tin with butter or non stick cooking spray.
- Beat the butter, brown sugar and sugar together.
- Add in the eggs and vanilla extract and beat until smooth.
- Add in the flour, baking powder and baking soda and mix. Finally add the chocolate chips and mix together.
- Spread half of the chocolate chip cookie dough in an even layer in the base of the prepared pan.
- Place 170g of the Kitkats on top of the cookie bar base.
- Top with the remaining cookie dough in little blobs.
- Bake for 30-35 minutes. The top and sides will be golden and set but the middle will have crumbs attached to a skewer inserted in the middle. Remove from the oven and top with the remaining KitKats.
- Allow to cool before slicing and serving.
- These will keep for a week in an airtight container
