These Paleo Brookies are TO DIE FOR! I have made them a number of times now and I’m finally sharing the recipe. This is the kind of recipe you really wouldn’t know was healthy and is a great way of eating a ‘healthier’ treat without feeling deprived.

It’s the weekend and you know what that means? Baking time! This Paleo Butterscotch Slice is dairy free, grain free, refined sugar free and gluten free. This slice consists of a shortbread base, a caramel filling and soft chocolate topping. I based this recipe off my Butterscotch Slice, which is absolutely moreish! I was initially intrigues with the idea of trying to make a shortbread without the usual butter, flour and sugar because, let’s face it, that’s basically all there is to shortbread.
I set straight to work after setting myself this task. (Sometimes I feel like bit of a made baking scientist!)
Making the shortbread didn’t take long to perfect. This shortbread tastes delicious, has a very similar texture to the original and the only thing that isn’t like traditional shortbread is that it doesn’t melt in the mouth. However, you won’t miss this with the added layers of caramel and chocolate!
If you love carrot and almonds, you are going to love this Paleo Carrot Almond Cake! This is gluten free, grain free, refined sugar free, dairy free, healthy and most importantly, it tastes so yummy!
This paleo carrot almond cake is super moist from the carrots, has a lovely almond flavour and texture from the use of almond meal and has a lovely hit of spice from the cinnamon and nutmeg. Not only is this healthy and taste great, but it is also a quick, one bowl recipe that can be made in ten minutes!
Yay its the weekend! Finally…. It’s been one of those weeks for me but at least the weekend brings the promise of relaxation.
One of things I love to do to relax is watch movies. I especially love watching movies in the winter when the weather is rainy and cold. It means I can curl up with a blanket, by the fire and feel all cosy and nice! I love it.

How was everybody’s weekend? Mine was spent recipe developing and relaxing. The weather in my neck of the woods has been – what others would describe as – terrible. For the past week we have had rain, wind, thunder and lightning and just overall bad weather. I actually quite like this kind of weather, provided I can stay inside my home. I love being inside with the fires going and either curling up under a blanket watching movies or flitting round my kitchen baking something delicious. For me, bad weather just enhances the cosiness and happiness I get from baking. If that makes sense?
