Yay its the weekend! Finally.... It's been one of those weeks for me but at least the weekend brings the promise of relaxation.
One of things I love to do to relax is watch movies. I especially love watching movies in the winter when the weather is rainy and cold. It means I can curl up with a blanket, by the fire and feel all cosy and nice! I love it.
I'm interested to hear how others relax, so what do you do to relax?
Another thing I love to do while watching movies is eat! (of course).... This brings me to this Paleo No Bake Caramel Slice. A rich chocolate base with a smooth, sweet caramel filling topped with more rich chocolate! This slice is A.M.A.Z.I.N.G.

This slice is easily one of the best things I have ever eaten. So that's saying a lot.
This slice is adapted from The Merrymaker Sisters 'Paleo Salted Choc Caramel Slice'. If you didn't know this was paleo or 'healthy' you would never know. I know people say that a lot but that is truly the case in this slice.
You want to know the best bit about this slice? The caramel.
This caramel is divine. It is made by pureeing dates, coconut oil and coconut milk together and the mixture turns into the sweetest, creamiest and - dare I say it? - best caramel ever to be made on this earth. That may be a slight exaggeration, but you know what I mean. Its delicious.
Not only is this slice paleo but it is also vegan and 'clean eating'. What makes this even better is that it is so easy to make, it doesn't require an oven and it doesn't contain any odd ingredients. What's not to love?

Paleo No Bake Caramel Slice
Ingredients
Base;
- ½ Cup Walnuts
- ⅓ Cup Almond Meal
- 2 Tbsp. Coconut Oil, Melted
- 2 Tbsp. Cacao (Or cocoa if you don't have cacao)
- 2 Tbsp. Maple Syrup, (Or honey)
Caramel;
- 1 and ¾ Cups Pitted Dates
- ½ Cup Coconut Milk
- ¼ Cup Coconut Oil, Melted
Chocolate Topping;
- ⅓ Cup Coconut Oil
- 2 Tbsp. Cacao (Or cocoa if you don't have cacao)
- 1 - 2 Tbsp. Maple Syrup, Depending on how sweet you want it
Instructions
Base;
- Place the walnuts, almonds, cacao and maple syrup in a food processor and mix together.
- Add the melted coconut oil and mix until all is combined.
- Spread into an 8"x8" lined, baking tin and place in the freezer.
Caramel;
- Place the dates, coconut milk and melted coconut oil in a food processor and mix until all the dates are pureed and the mixture is nice and smooth. (around 5 minutes).
- Spread this over the nut and chocolate base and place back in the freezer.
Chocolate Topping;
- Place the coconut oil, maple syrup and cacao in a saucepan on a low heat and melt everything together.
- Spread this over the caramel and place it back in the freezer until the top has set. (At least 1 hour).
