Instructions
Place the dates and water in a saucepan over a medium heat and simmer until the dates soften and the water is absorbed.
Place the dates, maple syrup, rolled oats, almonds and salt into a food processor or large blender and blend until combined and smooth.
Line a tray or large plate with non stick baking paper and roll the mixture into 16-18 balls and place in the freezer for 30 minutes.
Place the desiccated coconut on a plate and roll the balls in the coconut before placing in the fridge for a further 30 minutes.
Store in an airtight container in the fridge for up to a week.
They also freeze well for up to 3 months.
