I can’t get enough CUPCAKES!
That's right. I can't.
Perhaps it's because I had never had a cupcake until a couple of years ago and I'm making up for lost time.
Well whatever the reason, my friends and family certainly aren't complaining....
My new recipe is for Vanilla Cupcakes. These are the traditional cupcakes and yet, these are the cupcakes I've had the most trouble with. They would either be not moist enough, or not cakey enough, or just plain weird!
So I looked at a few recipes and did some experimenting. and finally found the solution!
So please take a look at the recipe and try these for yourself! These will be best vanilla cupcakes you have ever made!
So what could make these cupcakes even better.....

Cream Cheese Icing?!
Why yes. Yes, I think it could be.
Vanilla Cupcakes iced and filled with cream cheese icing anyone?
Vanilla Cupcakes with Cream Cheese Icing
Ingredients
- 110 g Butter, Softened (½ Cup)
- ½ Cup Caster Sugar (Superfine Sugar)
- 2 Large Eggs
- 1 and ½ Cups All-Purpose Four
- 1 and ½ teaspoon Baking Powder
- 1 teaspoon Baking soda
- ¼ teaspoon Salt
- ¾ Cup Milk
- 1 Tbsp. Vanilla Extract, Depends on your personal tastes
Cream Cheese Icing;
- 110 g Butter, Softened (½ Cup)
- 1 Cup Cream Cheese
- 3-4 Cups Icing Sugar
- 2 teaspoon Vanilla Extract
Instructions
- Preheat the oven to 180°C (350°F) and line a muffin tray with cupcake cases.
- Beat the butter and caster sugar together.
- Add the eggs one at a time, beating in between each addition.
- In a separate bowl mix the flour, baking powder, baking soda and salt together.
- Beginning and ending with the flour mixture, alternate adding the flour and milk to the butter mixture.
- Once it is all combined add the vanilla extract and ensure it is mixed through.
- Spoon in the mixture into the prepared cupcake cases and bake in the oven for around 15 minutes until the cupcakes spring back to the touch.
- Allow to cool completely before filling and icing.
- For the Cream Cheese Icing;
- Beat the butter and cream cheese until smooth and creamy.
- Add the vanilla extract and icing sugar and mix by hand until all combined and smooth.
