No Bake Avalanche Bars: An easy, no bake slice consisting of crushed biscuits mixed with white chocolate and peanut butter, packed full of marshmallows and chocolate chips.
Happy Friday eve everyone! How has everyone's week been? I have been so busy this past week and am in dire need of a vacation! I have been baking like mad, working hard on editing the photos from the food photo-shoots, working on a top-secret project.... And then of course writing this blog post. Although sometimes it seems like a lot, I absolutely love every minute of it!
Now onto these bars...
For quite sometime I have seen Avalanche Cookies on Pinterest and although they looked super yummy I never knew what they were. I checked out a couple of the recipes and realised they were copycat recipes of a sweet treat that consists of rice crispies, melted peanut butter and white chocolate, mini marshmallows and chocolate chips. Although they looked and sounded awesome I put off making them for a long time. For one thing, although I like rice crispies as a cereal, I don't usually like them in baking. I am also not fond of too much white chocolate. A little hint in baked goods here and there is great but cookie consisting of melted white chocolate seemed too much for me.
Then I had a brain wave.
As usual, I was thinking up different combinations of flavours and different ideas for baking when I though of those Avalanche Cookies. I began to think about how I could adapt the recipe to something I would enjoy and then it hit me. Replace the rice crispies for crushed biscuits!
I knew I couldn't replace the white chocolate for anything otherwise they wouldn't resemble anything like the traditional Avalanche Cookie so I was willing to give it a go and see how they tasted.
Let me tell you now.... The white chocolate is not at all too sweet or overpowering, mixed with peanut butter it is amazing, the soft bits of marshmallows against the sweet crunch of the biscuit mix is awesome and these bars are AMAZING! Kids will love them, adults do love them (I tested these on a few and they all swooned. Yes, swooned), white chocolate haters will love them, and they are insanely simple to make.
All you need to do is crush some wine biscuits (or Graham Crackers, digestives, etc), melt the white chocolate and peanut butter together, mix that into the biscuits, stir in some chocolate chips and chopped marshmallows, place that in a tin and set in the fridge. Done and dusted.
(A little side note on the peanut butter. I always use an all natural no salt added peanut butter, which means it is only peanuts. For one thing its healthier but I also found that it tastes just as good, actually better, than the added sugar ones. You can use whatever peanut butter you prefer but I do recommend at least trying a natural one.)
I turned this into a slice rather than cookies as I found the mixture too crumbly and annoying to work with to turn these into cookies. I know these aren't authentic copycat Avalanche Bars but I like to think these are better!
No Bake Avalanche Slice
Ingredients
- ⅔ Cup Crunchy Peanut Butter
- 400 g White Chocolate
- 250 g Digestives, (Graham Crackers)
- 2 Cups Marshmallows, Chopped
- ½ Cup Mini Chocolate Chips
Instructions
- Grease a 9"x13" pan and set aside.
- Melt the peanut butter and white chocolate together and mix with the crushed biscuits.
- Chop the marshmallows into quarters and mix those with with the chocolate chips through the peanut butter mixture.
- Press into the prepared pan and place in the fridge for at least an hour to set.
