I have made this slice a few times now and it has got to be one of the yummiest things I have ever created! And its not gooey, doesn't contain chocolate and has some elements of healthy eating! Is it just me or has the world turned upside down?
I'm not the only one to share in this obsession with this Plum and Pear Slice. My family all absolutely love this and it is gone in a flash! The base is similar to that of a shortbread but it uses almond meal to really amp up the flavour and texture. to top the base, a little Black Doris plum jam and sliced fresh or tinned pears.
It doesn't matter whether you're using fresh or tinned pears, just make sure you blot the pears with some paper towels to get rid of as much extra moisture as you can, otherwise, your slice will end up a gooey mess.
If you can't get your hands on plum jam or you don't like the flavour of plums (gasp!) then boysenberry works just as well.
This is one of those great slices that are perfect for guests, parties, family get-togethers or just a simple morning tea. This is a crowd pleaser and has certainly become a staple in my house!
Plum and Pear Slice
Ingredients
- 1 and ¼ Cups All Purpose Flour
- ½ Cup Caster Sugar
- ½ Cup Almond Meal
- 1 and ½ teaspoon Baking Powder
- 170 g Butter, Softened
- 1 Large Egg, Lightly Beaten
- 2 Tbsp. Water
- 1 Tin Pears, Drained and dried (Or 1 and ½ fresh pears, dried)
- ¾ Cup Black Doris Plum Jam
Instructions
- Line a 9"x13" pan with baking paper and preheat the oven to 180°C (350°F).
- Slice your pears into thin slices and leave them to dry on some paper towels.
- Add the flour, caster sugar, almond meal and baking powder to a food processor.
- Add the softened butter and pulse until the mixture resembles fine breadcrumbs.
- Add the lightly beaten egg and water.
- Mix until the mixture forms a dough.
- Spread the mixture in an even layer over the base of the prepared baking tin.
- Spread over the plum jam.
- Top with the pear slices and bake for 25-35 minutes.
- A skewer inserted should come out clean.
- Allow the slice to cool completely before slicing.
