    Red Wine Date Bars. Where do I begin? This recipe is a take on the Vanilla, Cinnamon, Date Bars. Instead of adding vanilla essence to the date mixture, I reduced the dates in red wine and created these beauties. Honestly, the flavour of these are out of this world!

    This isn't the first time I've used red wine on LCB. Remember the Red Wine Fudge Brownies? The difference is with these date bars you can't taste any of the alcohol because we cook that off. All that's left is a deep, rich flavour that is just incredible. Trust me when I say this.... You have to make these!

    I decided to post these today because, well it's Thursday and everyone needs a little pick me up on Thursday but I'm also celebrating. Why you ask? Oh, only because I'm going to GUNS 'N' ROSES TONIGHT!!!! (Excuse the excessive use of explanation points). I love music and I love most music so I am always hesitant to say I have a favourite band but if I did have a favourite band, Guns 'N' Roses would be it. Honestly, can't even describe how excited I am. (Don't Cry is my favourite song). Anyone else love GNR?

    Alright sorry, I've taken a breathe and calmed myself. Back to the recipe.

    These bars use the same base and topping recipe as the vanilla, cinnamon, date bars which is a mixture of butter, brown sugar, flour, oats and of course cinnamon. We only leave out the vanilla as mentioned above.

    Red Wine Date Bars

    This recipe is a take on the Vanilla, Cinnamon, Date Bars. Instead of adding vanilla essence to the date mixture, I reduced the dates in red wine and created these beauties.

    Ingredients

    • 1 Cup Red Wine
    • 200 g Dates, Chopped
    • 180 g Butter, Softened (¾ Cup)
    • 1 Cup Brown Sugar
    • 1 Cup Oats
    • 1 and ¾ Cups Wholemeal Flour
    • 2 teaspoon Cinnamon
    • 1 teaspoon Baking Soda

    Instructions

    • Preheat oven to 180°C (350°F) and grease or line a 9"x13" baking tin with baking paper.
    • Chop the dates into small pieces and add to the red wine in a saucepan.
    • Bring the dates to the boil then turn down to a simmer until the dates are soft and the mixture has thickened.
    • Beat the butter and brown sugar until they are combined but there are still lumps of butter present.
    • Add the wholemeal flour, oats, cinnamon and baking soda.
    • Mix together with your hands until the mixture is nice and crumbly.
    • Spread ½ to ⅔ of the mixture evenly over the baking tray.
    • Take the dates off the heat and allow it to cool slightly.
    • Pour the date mixture gently over the base of the slice and spread evenly.
    • Sprinkle the rest of the crumbly mixture over the top of the dates and place it in the oven.
    • Bake for 30-35 minutes until it is nice and golden on the top.
    • Allow it to cool completely before slicing it into bars.
