Brownie Cookies are rich and fudgy brownie cookies packed full of chocolate chips. These can be made gluten free and vegan!
How can describe these cookies? They're insanely rich and dark and fudgy, just like a brownie in cookie form!
The video below will show you how quick and easy they are to make. Just one bowl and a spoon is required and they come togesther so fast they can be on your plate in 20 minutes!
I have made these a number of times. One time I made these completely vegan (to do so you just need to use a vegan chocolate and vegan chocolate chips). Another time I made them with a gluten free flour blend which required a touch more water added to the mixture but the result was more melt-in-the-mouth cookies. Most times I make them as is as they're the ingredients I have on hand the most but all ways taste amazing with very little difference in taste and texture.
Brownie cookies have been on my list of must-try baking recipes for years and I have finally attempted and created a recipe I am happy with and I know you will be happy with also!

Brownie Cookies
Ingredients
- ½ Cup Brown Sugar (80g)
- 1 Cup All Purpose Flour (Or Gluten Free Flour) (120g)
- ½ Cup Cocoa (47.5g)
- ¾ teaspoon Baking Soda
- ½ teaspoon Baking Powder
- ⅛ teaspoon Salt
- ½ Cup Dark Chocolate (Or Vegan Chocolate) (90g)
- 6 Tbsp. Oil
- 2-4 Tbsp. Water
- ½ Cup Chocolate Chips (90g)
Instructions
- Preheat the oven to 180°C (350°F) and line a baking tray with baking tray and set aside.
- Place the brown sugar, flour, cocoa, baking soda, baking powder and salt in a bowl and mix together.
- Melt the oil and dark chocolate together and mix into the dry ingredients. Add in a tablespoon of water at a time until the mixture comes together.
- Add in the chocolate chips and stir through.
- Roll into balls and place on the baking tray and place in the oven for 10-15 minutes. The middle will be soft and they will look slightly underdone but they will harden as they cool.
