    Mocha Cookies

    Mocha Cookies are thick, soft and chewy cookies, rich with chocolate with a strong hit of coffee. These cookies are irresistibly smooth and taste just like the perfect mochaccino!

    You asked and I listened! The original recipe I had on this site didn't always work for everyone (the dough wouldn't spread etc). I didn't have an issue with the recipe, but I have reworked the recipe to ensure that the mocha cookies turn out perfect every time!

    I've stated before (in my coffee icing post) that I am not a coffee fan. I don't even particularly like the smell. My family on the other hand, are coffee fanatics. Hot, very strong, espresso kind of coffee fans.

    I can tolerate a mocha (and I don't mind eating one or two of these mocha cookies!) but other than that.... I stay away from coffee.

    Weirdly, I do love making coffees - I am a certified barista!... I know, I'm an enigma.

    These mocha cookies are for all the mocha lovers and coffee lovers out there. I added a full TWO tablespoons of instant espresso powder (16g) and a ¼ cup of cocoa. These are rich in every sense of the word. Rich in chocolate and rich in coffee. (My mother would never forgive me if you couldn't taste the coffee!)

    The perfect balance of coffee and chocolate in my opinion.

    The recipe for the mocha cookies cookie dough, is based on my bakery style triple chocolate cookies recipe. This cookie dough creates soft, chewy and thick cookies every single time!

    How to Make Mocha Cookies

    Add the boiling water to the espresso powder and set aside
    butter and sugar in a mixing bowl
    Add the butter, brown sugar and suger together and beat.

    Add in the egg and vanilla and beat together
    Flour in a mocha cookie mixture.
    Add the flour, cocoa, baking poder, cornflour and salt and beat until combined

    Allow the dough to chill in the fridge for 30 minutes

    So if you are not a coffee drinker, I still recommend trying these mocha cookies. You never know, you might surprise yourself like I did!

    Mocha Cookies

    Ingredients

    • 3 Tbsp. Instant Coffee (espresso powder) (18g)
    • 1 Tbsp. Boiling Water
    • ½ Cup Butter, Cold and cubed (110g)
    • ½ Cup Brown Sugar (100g)
    • ¼ Cup Sugar (50g)
    • 1 teaspoon Vanilla Extract
    • 1 Large Egg
    • 1 and ¾ Cups All-Purpose Flour (210g)
    • 2 teaspoon Cornflour (Cornstrach)
    • ¼ Cup Cocoa (24g)
    • ½ teaspoon Baking Powder
    • ⅛ teaspoon Salt
    Metric - US Conventional

    Instructions

    • Preheat the oven to 180°C (350°F) and line two baking trays with baking paper and set aside.
    • Mix the instant coffee with the boiling water and set aside.
    • With an electric mixer, beat the cold butter with the brown sugar and sugar creaming them together. There should still be clumps of butter visible.
    • Add the egg, vanilla extract and coffee mixture and beat together. 
    • Add the flour, cornflour, cocoa, baking powder and salt to the wet ingredients and beat until combined.
    • Place the dough in the fridge to chill for 30 minutes. Once chilled, roll into balls and place on the baking tray.
    • Bake for 12-14 minutes. They should have spread slightly but be soft to the touch.
    • Allow them to cool for 10 minutes on the baking tray before transferring to a wire rack.
    • Eat warm or cool and store in an airtight container for up to a week.

      Just tried these cookies and they did not spread at all— like the comment above. The dough was too stiff. I used all room temp ingredients. ??

      They were delicious but didn't spread AT ALL. I ended up with little bowling balls. It think I'm going to have to increase the heat to 375 deg F. I noticed you referred to espresso powder but you used 'instant coffee' in the directions. I may try the espresso next time. 🙂

        Oh I'm sorry to hear that. I've made these numerous times and they always spread for me. Did you use at room temperature butter? Apologies for the confusion with the coffee. We use an instant coffee that is strong like espresso powder so it's called espresso coffee but it is instant coffee granules if that makes sense!

          Yes, room temp butter and the egg as well. My oven temp is also accurate. Oh well ... it happens. 🙂

            Yes it does some days are just not good days for baking. I made a recipe the other day I have been using for years and it just refused to turn out like it normally does.
