Chocolate Fudge Caramel Oat Bars are a chewy oat slice filled with buttery caramel and a simple chocolate fudge for the ultimate sweet and gooey comfort treat!
You would think with a week off university I would be less stressed. Quite the opposite actually. Never the less, it means I get to 'stress bake'. Baking always calms me and puts me in my happy place so today's recipe is born out of said stress baking.
I hope everyone had a fantastic Easter weekend! I certainly did spending it with family and eating far too much chocolate.
Speaking of chocolate...
Look at these beauties and the oozing chocolate fudge middle.
I based these chocolate fudge caramel oat bars off my buttery caramel oat slice and my Nutella caramel oat slice. The the oat slice top and bottom is the same recipe as it always results in a lovely chewy oat slice that's rich and buttery.
The combination of the chocolate flavour and the caramel flavours from the Nutella caramel oat slice really inspired me to create these chocolate fudge caramel oat bars. The chocolate fudge is dark and richer than Nutella. It is a simple homemade chocolate fudge of condensed milk, chocolate and vanilla extract all melted together.
The caramel is my classic caramel filling that appears in too many recipes to count and is again condensed milk based. The condensed milk in both the fudge and caramel firms up in the fridge so you have the option of a slice with nice clean edges and a solid chocolate fudge and solid caramel filling or you can heat it up and watch the fudge and caramel ooze out of these beautiful bars!

Chocolate Fudge Caramel Oat Bars
Ingredients
- 1 Cup Butter, Melted (220g)
- 1 and ½ Cups Brown Sugar (165g)
- 2 Large Eggs
- 2 and ⅔ Cups All Purpose Flour (330g)
- 3 teaspoon Baking Powder
- 2 and ½ Cups Oats (235g)
- 1 Cup Desiccated Coconut (100g)
Caramel;
- ½ Tin Condensed Milk (200g)
- ⅓ Cup Butter (75g)
- ¼ Cup Golden Syrup (90g)
- ½ teaspoon Vanilla Extract
Chocolate Fudge;
- 1 and ¼ Cups Dark Chocolate (225g)
- ½ Tin Condensed Milk (200g)
- ½ teaspoon Vanilla Extract
Instructions
- Preheat the oven to 180°C (350°F) and line a 9"x13" baking tin with baking paper.
- First make the caramel.
- Place the condensed milk, golden syrup and butter in a saucepan on a medium heat and allow them to melt together.
- Once it has all come together take off the heat and add the vanilla extract. Allow to cool slightly while you prepare the chocolate fudge.
- Melt the dark chocolate, condensed milk and vanilla extract together and set aside while you make the oat slice.
- Place the brown sugar in a bowl and mix in the melted butter.
- Add in the eggs and mix.
- Add the two flours, oats and coconut and mix until all combined.
- Press ⅔ of the mixture into the base of the prepared pan.
- Top with the chocolate fudge and the caramel and then crumble over the remaining oat mixture on top.
- Place in the oven to bake for around 30 minutes. The top should be a light golden colour.
- Allow to cool completely before slicing. I like to cool mine in the fridge so the caramel slices nicely.
