Remember that Chocolate Brownie Cookies and Cream Freak Shake I made last week? That tantalizingly sweet, delicious, showstopping, fun, crazy, amazing creation? (Sorry, drooling on the keyboard...)
Well today I have another tantalizingly sweet, delicious, showstopping, amazing creation.....
It's everything about Lights, Camera, BAKE! that I love. It has movie star quality, finesse, it's show stopping, outrageous, delicious and a little crazy. Oh, and it's healthy!
*This Healthy Freak Shake can be dairy free, refined sugar free, gluten free, grain free, vegan and paleo!*
Let me explain: This healthy freak shake is made free dairy free ice cream mixed with coconut cream and is smothered in layer upon layer of finely ground macadamias and almonds, brownie pieces, honey (or maple syrup if making this is vegan) and chocolate sauce, topped with a piece or two of brownie.
I said this was healthy, not low calorie!
Now I'm not usually one to toot my own horn, but I have to say on this occasion, I am a genius!
I'll be honest, I was a little dubious when I thought of this. I didn't think I would like it that much let alone love it! If someone served this to me and just told me it was a Chocolate Nut Freak Shake, I would not even think twice about it. Seriously, give it a go!
Right on to the assembly.
Begin with drizzling chocolate sauce all round the inside of the glass.
Place the a couple of scoops of ice cream in and top those with brownie pieces, crushed nuts, honey (or maple syrup) and more chocolate sauce.
Top with more ice cream and pour in the coconut cream or milk. I used coconut cream to make it super creamy. (You can mix the ice cream and coconut cream together before hand so it is already a shake mixture if you wish. I didn't bother because its all going to melt together anyway.)
Top all that off with honey, chocolate sauce, crushed nuts, a full size piece - or two - of brownie, a few whole nuts and you're done!
So dreamy and delicious. You really must try this! Its so delicious and amazing you wont know its healthy!
*Please note that in my version I use my Paleo Brownies recipe which are not vegan so if you want a vegan shake, use a vegan brownie recipe.
Also please check labels of ice cream and chocolate to ensure they are what you are looking for (i.e dairy free, gluten free, vegan, paleo, etc).
If you are not worried about being strict with these and are just looking for a healthier dessert or just want to eat something insanely delicious in its own right, like me, then ignore those last couple of paragraphs and buy what ever ice cream and chocolate you like.*
Healthy Freak Shake
Ingredients
- 4-5 Scoops Ice Cream, Dairy Free, Vegan, Paleo
- ½ Cup Coconut Cream
- ¼ Cup Almonds
- ¼ Cup Macadamias
- ¼ Cup Runny Honey, or maple syrup
- 3 Pieces of my Paleo Brownies, or other brownies
- 4 Macadamias and almonds for garnish
Chocolate Sauce;
- 125 g Dark Chocolate
- ½ Cup Coconut Cream
Instructions
Chocolate Sauce;
- Melt the chocolate and coconut cream together until smooth.
- Allow to cool to room temperature.
- Chop two of the brownies into small cubes.
- Crush the almonds and macadamias until fine.
- Mix the ice cream and coconut cream together if you are doing that, otherwise just layer them to melt together in the glass.
- Line the inside of a large glass with 2-3 tablespoons of chocolate sauce. Place two scoops of ice cream (or half of the ice cream/cream mixture) on top.
- Top that with the brownie cubes, half of the honey, half of the crushed nuts and half of the remaining chocolate sauce.
- Top with another 2-3 scoops of ice cream (or remaining ice cream/cream mixture) to the top of the glass.
- Pour through the coconut cream.
- Top with the remaining crushed nuts, honey and chocolate sauce.
- Garnish with the whole almonds and macadamias and full piece of brownie.
