Salted Caramel M&M Cookie Bars are gooey and chewy chocolate chip, M&M cookie bars with a layer of caramel sauce running through the middle for the ultimate caramel and chocolate, comfort food recipe.
A recipe born out of a challenge in the kitchen... If you are subscribed to my YouTube Channel, you may have seen my Blindfold Baking Challenge video. That video was the basis for my Kinder Bueno Brownies recipe.
Well I'm back! There's a new video up on my YouTube channel and, you guessed it, it's another blindfold challenge only this time I'm not blindfolded.... My 11 year old cousin is!

This recipe was born out of that challenge. Salted Caramel M&M Cookie Bars complete with actual Caramel M&Ms!
Have you seen those yet? We just recently got them here in Australia. I'm not sure if they've hit New Zealand yet but I know they've been around for a little while in other countries.
The Caramel M&Ms remind me of a Twix bar. Chewy caramel that's not overpowering with plenty of chocolate coating. For the basis of these M&M cookie bars I used a mixture of caramel M&Ms, regular M&Ms and chocolate chips. You can never have too much chocolate am I right?
If you can't get your hands on caramel M&Ms just use regular instead.
The base of these cookie bars is my trusty Cookie Pie recipe. It never lets me down! I baked these in a square 9"x9" baking pan but you could bake them in a round one and turn these bars into a cookie pie.
The caramel sauce running through the middle of these cookie bars is my homemade Salted Caramel Sauce. The easiest caramel sauce you will ever make! You have options here too. Add the salt or omit the salt. I added the salt, making these salted caramel M&M cookie bars, but the choice is yours!
What we get with the caramel running through the middle is a an ultra gooey centre. The caramel semi cooks into the cookie bars so you get the flavour of the sauce and the goodness without it running all over the place.

Salted Caramel M&M Cookie Bars
Ingredients
Caramel;
- ½ Cup Brown Sugar (90g)
- ¼ Cup Butter (55g)
- ¼ Cup Milk
- 1-2 teaspoon Salt (Optional)
Cookie Bars;
- ¾ Cup and 2 Tbsp. Butter, Partially Melted (200g)
- ¾ Cup Brown Sugar (140g)
- ½ Cup Sugar (100g)
- 2 Large Eggs
- 2 teaspoon Vanilla Extract
- 2 and ½ Cups All Purpose Flour (300g)
- 1 teaspoon Baking Powder
- ½ Cups Chocolate Chips (90g)
- 1 Cup Caramel M&Ms (210g)
- ½ Cup M&Ms (100g)
Instructions
Caramel Sauce;
- Place the butter and brown sugar in a saucepan on a medium to high heat.
- Once the butter has melted, add the milk and bring to the boil.
- Boil for at least 2 minutes before removing from the heat.
- Add the salt (optional) and allow to cool.
Cookie Bars;
- Preheat the oven to 180°C (350°F) and grease a 9"x9" square baking pan.
- Beat the super soft or partially melted butter, brown sugar and sugar together.
- Beat in the eggs and vanilla extract.
- Mix in the flour and baking powder.
- Stir in the chocolate chips, M&Ms and caramel M&Ms.
- Spread half the cookie dough in an even layer as the the base in the prepared dish.
- Pour over the caramel.
- Top with the remaining cookie dough and place in the oven to bake for 20-25 minutes. The middle will still wobble but the outside will be starting to turn golden.
- Allow it to cool completely before slicing otherwise the caramel will just run everywhere.
