I have had this recipe for months now and I am finally ready to share it with the everyone! Please welcome to the world, these Cookie Dough Stuffed Chocolate Cookies. Light and soft, gooey yet thick and chewy chocolate cookies filled with edible chocolate chip cookie dough. Pure bliss...
The idea for this recipe sprang into my head after seeing these Cookie Dough Chocolate Chip Cookies from Cookies and Cups. The cookies looked so soft and ooey gooey that I instantly wanted to try them. If you haven't noticed, I love goo. Delicious goo.
Although being bombarded with images of these delicious cookies I didn't make them. Instead, I was in the process (more like the idea stage) of developing a chocolate cookie. A really dark, rich, gooey yet chewy chocolate cookie. Now, I could have made both, and I probably would have had I not got a brain wave. Why not combine cookie dough and chocolate cookies? Well, as you can see, I couldn't resist experimenting and pursuing this idea.
The result: Better than I could ever have imagined.
For the cookie dough center I adapted my Chocolate Chip Cookie recipe and halved it as these are quite large cookies. I then did a bit of playing with different measurements of cocoa and flour ratios for the chocolate cookies and found that these chocolate cookies are rich, gooey, soft and thick. They're as rich and as decedent as a chocolate brownie.
For these cookies you need to first make the cookie dough. You then need to roll them into balls and freeze them for a good half an hour. This is an important step that should not be skipped. By freezing the dough, not only does it make it easier to work with but it also ensures that it doesn't cook in the oven so it remains cookie dough. After the dough is frozen all that's left is making the chocolate cookie dough and then wrapping the chocolate cookie dough around the chocolate chip cookie dough before placing them in the oven to cook.
These are amazing straight from the oven. All melting, warm and gooey! They are just as delicious and more stable cool but if you have a microwave and some ice cream in your freezer, I recommend heating up a cookie and serving it with ice cream. So good!
Cookie Dough Stuffed Chocolate Cookies
Ingredients
Cookie Dough;
- 80 g Butter, Lightly Melted (⅓ Cup)
- 2 Tbsp. Sugar
- ⅓ Cup Brown Sugar
- 2 Tbsp. Milk
- 1 teaspoon Vanilla Extract
- 1 and ⅓ Cups All Purpose Flour
- ½ Cup Mini Chocolate Chips
Chocolate Cookies;
- 90 g Butter, Softened
- ¼ Cup Sugar
- ⅓ Cup Brown Sugar
- 1 Large Egg
- 1 teaspoon Vanilla Extract
- ¼ Cup Cocoa
- ½ teaspoon Baking Powder
- ¼ teaspoon Baking Soda
- 1 Cup All Purpose Flour
Instructions
Cookie Dough;
- Beat the butter, icing sugar, brown sugar, vanilla extract and milk together.
- Beat in the flour and the mini chocolate chips.
- Roll the dough into 12 balls and place them on a tray in the freezer for at least half an hour.
- While the cookie dough is freezing, make the chocolate cookies.
- Preheat the oven to 180°C (350°F) and line a baking tray with baking paper.
- Beat the butter, brown sugar and sugar together until fluffy.
- Beat in the vanilla and egg.
- Finally beat in the cocoa, flour, baking powder and baking soda.
- Take the cookie dough balls out of the freezer and grab a chunk of the chocolate cookie dough.
- Flatten the piece of dough in your hands and place a cookie dough ball in the middle.
- Wrap the chocolate cookie dough around the ball and place on the baking tray.
- Repeat with the remaining dough.
- Bake the cookies for around 15 minutes. The cookies will have spread a little and the outside will still be soft but look set.
