What exactly IS a Zebra Brownie you ask? It is a chocolate brownie baked together with a white chocolate blondie/brownie, forming a combination of black and white. Hence the zebra.
The chocolate brownie is ultra fudgy, rich and gooey. To go completely overboard on the zebra theme I added white chocolate chips to this half of the mixture.
The white chocolate brownie is equally as fudgy and gooey but is sweet with white chocolate rather than rich. (This half has the regular chocolate chips). The balance between rich and sweet is perfect and the textures of both brownies are essentially the same so the flavours just seamlessly flow together as one.
I served this to many different people and no one could stop at just one. Including me of course...
For this recipe, I adapted my Chewy Brownie recipe and my White Chocolate Blondie recipe. I made a couple of little tweaks to each recipe and baked them in a 9"x9" baking pan rather than an 8"x8". The reason behind this is the brownie mixtures were a bit big for the 8x8 so would not cook in the center properly. There's gooey, and then there's uncooked gooey.
The most notable change I made to both brownies is I omitted the baking soda in the white chocolate brownie. I found this ensured both types of brownies remained super fudgy and neither 'grew' too much in the cooking process as the only leavening agent in these are the eggs. I found using baking soda made the white chocolate brownie grow a lot more than the chocolate brownie and became more cakey with with extended cooking time. The texture just isn't what you want with these Zebra Brownies so please don't add any baking soda!

Zebra Brownie
Ingredients
For the White Chocolate Brownie;
- ⅓ Cup Butter (75g)
- ⅔ Cups White Chocolate (125g)
- 1 Large Egg
- 1 teaspoon Vanilla Extract
- ½ Cup Sugar (100g)
- ¼ Cup Brown Sugar (55g)
- 1 Cup All Purpose Flour (125g)
- ½ Cup Chocolate Chips (90g)
For the Chocolate Brownie;
- ⅓ Cup Butter (75g)
- ⅔ Cups Dark Chocolate, Melted (125g)
- 1 Large Egg
- ⅔ Cups Brown Sugar (130g)
- ½ teaspoon Vanilla Extract
- ¼ Cup Cocoa (24g)
- ⅓ Cup All Purpose Flour (45g)
- ½ Cup White Chocolate Chips (90g)
Instructions
- Preheat the oven to 180°C (350°F) and line an 9"x9" baking tin with baking paper.
- First make the white chocolate brownie.
- Melt the butter and white chocolate together.
- Beat the brown sugar, sugar, egg and vanilla extract together until light and fluffy.
- Mix in the chocolate mixture.
- Stir in the flour and chocolate chips and pour in the baking tin.
- Now make the chocolate brownie.
- Melt the butter and chocolate together.
- Beat the brown sugar, egg and vanilla extract together until light and fluffy.
- Mix in the chocolate mixture.
- Stir in the flour, cocoa and white chocolate chips and pour over the white chocolate brownie in an even layer.
- Bake for 25-30 minutes. The top and sides will be set and the middle will be jiggly. Insert a skewer and when loose crumbs are still attached they are done.
