Brookies are a two layered slice that consists of a bottom layer of chewy chocolate chip cookie bars and a top layer of fudgy chocolate brownie!
I have healthy Paleo Brookies, Caramel Brookies, Deep Dish Brookies and even a blondie version!
Today we finally have a traditional Brookie recipe!
I love the combination of chewy chocolate chip, vanilla cookies and the rich and fudgy brownie! The textures and the flavour combination is an absolute winner!
I must admit I have been a little slack on my blog lately. I have a few recipes lined up for the coming weeks so don't fret! However, I have cut my posting down to once a week while my uni assignments begin to stack up. I will go back to posting a couple of times a week once uni is all done and dusted for the year.

Brookies
Ingredients
Chocolate Chip Cookie Layer;
- 1 Cup and 2 Tbsp. Butter, Partially Melted (200g)
- ¾ Cup Brown Sugar (140g)
- ½ Cup Sugar (100g)
- 2 Large Eggs
- 2 teaspoon Vanilla
- 1 Tbsp. Golden Syrup (20g)
- 2 and ¾ Cups All Purpose Flour (350g)
- 1 teaspoon Baking Powder
- 1 Cup Chocolate Chips (180g)
Brownie Layer;
- 1 Cup Dark Chocolate Buttons (190g)
- ¾ Cup Butter (170g)
- ⅔ Cup Brown Sugar (130g)
- ⅓ Cup Sugar (75g)
- 2 Large Eggs
- 1 teaspoon Vanilla Extract
- ⅓ Cup Cocoa (31g)
- 1 and ¼ Cups All Purpose Flour (155g)
Instructions
Chocolate Chip Cookie Layer;
- Beat the super soft or partially melted butter, brown sugar and sugar together.
- Beat in the eggs one at a time.
- Add the vanilla extract and golden syrup and beat in.
- Mix in the flour and baking powder.
- Stir in the chocolate chips.
- Set this aside.
Brownie Layer;
- Melt the butter and chocolate together.
- Beat the eggs, sugar and vanilla extract until light and fluffy.
- ix the chocolate mixture through the eggs.
- Mix in the cocoa, followed by the flour.
- Line a 7"x11" baking tin with cooking paper and preheat the oven to 180°C (350°F).
- Spread the cookie dough over the base of the baking tin.
- Top with the brownie mixture and spread in an even layer.
- Place in the oven for 35-45 minutes. The middle will slightly wobble and a toothpick inserted should have loose crumbs attached.
- The sides and top should be set. Allow to cool before slicing and serving.
