Caramel Brookies combine chewy chocolate cookies and white chocolate brownies with a creamy caramel filling!

Quick note before we dive into these bad boys, I just want to say quickly that the situation in the world is strange, scary, confusing, etc but I want this blog/YouTube Channel/Instagram to be source of normalcy and fun. Use baking as a way to pass the time in quarantine, turn on some music and dance in the kitchen while cooking!
I also chose to post today's recipe as there are minimal ingredients as I know people are finding it hard to get their hands on basic ingredients.

Today's recipe, Caramel Brookies, incorporates my white chocolate brownies recipe, my chocolate cookie recipe and caramel filling recipe, layers them up and creates this beautiful, fudgy, gooey, sweet and decadent treat you will struggle to stick to only one piece!
Brookies traditionally are chocolate chip cookies with a chocolate Brownie. I have broken those rules and crossed a white chocolate brownie with a chocolate cookie.
The world is turned upside down and so I have embraced the uncertainty in this recipe also!
If you want to use a chocolate chip cookie dough instead of the white chocolate brownie to keep these proper 'brookies', you can!
How to make the Caramel Brookies
The recipe is really straight forward.
First you make the chocolate cookie dough recipe which is just like a classic cookie recipe.
Next you make the white chocolate brownie which is a very similar method to the brownie.
Beat the eggs, vanilla and sugar together until fluffy (this ensures a crackly top).
Melt the white chocolate and butter together and mix through the egg mixture.
Finally fold through the flour and that's it! Easy peasy.
Finally you need to make the condensed caramel, which again, is so easy you only need a saucepan and a spatula.
I used a 9"x9" baking pan for these caramel brookies and found the height and caramel to brownie ratio perfect, however if you want these to go further you could always make these in a 7"x11" or maybe even a 9"x13" baking pan. You would bake them fore less time and result in a flatter slice.

Caramel Brookies
Ingredients
Chocolate cookies;
- 90 g Butter
- ⅓ Cup Brown Sugar (60g)
- ¼ Cup Sugar (50g)
- 1 Large Egg
- ½ teaspoon Vanilla Extract
- 1 Cup All Purpose Flour (120g)
- ¼ Cup Cocoa (24g)
- ½ teaspoon Baking Powder
- ½ Cup Chocolate Chips (90g)
White Chocolate Brownies;
- 75 g Butter (⅓ Cup)
- ¾ Cups White Chocolate (135g)
- 1 Large Egg
- 1 teaspoon Vanilla Extract
- ½ Cup Sugar (100g)
- ¼ Cup Brown Sugar (40g)
- 1 Cup All Purpose Flour (120g)
- ¼ teaspoon Baking Soda
Caramel Filling;
- 80 g Butter (⅓ Cup)
- 1 Tin Sweetened Condensed Milk (395g)
- ¼ Cup Golden Syrup (60g)
Instructions
Chocolate Cookies;
- Preheat the oven to 180°C (350°F) and line a 9'x9' baking tin with baking paper.
- Melt the butter. Beat the butter, brown sugar and sugar together until fluffy.
- Beat in the vanilla and egg.
- Finally beat in the cocoa, flour, baking powder and chocolate chips.
- Spread the mixture into the prepared pan in an even layer and set aside.
Caramel;
- Place the ingredients in a saucepan over a medium heat.
- Stir and wait for the butter to melt.
- Bring it nearly to the boil then remove from the heat. Set it aside allow it to cool while you make the white chocolate brownies.
White Chocolate Brownies;
- Beat the brown sugar, sugar, egg and vanilla extract together until light and fluffy.
- Melt the butter and white chocolate together.
- Mix in the chocolate mixture.
- Stir in the flour and baking soda and set aside.
- Pour the caramel over the brownie recipe in the baking pan and then lightly pour the white chocolate brownie over top and place in the oven for 25-30 minutes.
- The top should be lightly golden but still soft in the middle with light crumbs attached when a skewer is inserted.
