M&M Brookies is an M&M filled blondie on top of a fudgy, rich brownie! This is a slice recipe you definitely want to get your hands on.
I have made brookies in the past. In fact I've made them a few times.
I've also made a blondie/brownie 'brondie' recipe which these M&M Brookies are based on.
'Brookies' are a combination of a fudgy chocolate brownie and usually a chocolate chip cookie. They are baked together in either layers or swirled together in the pan.
As you can see from the photos, I decided to layer mine as both the brownie mixture and the blondie mixture - yes I made blondies over cookies as I wanted these bars fudgy - are both runnier than your average cookie dough.
How to make M&M Brookies
The recipe for these are really very easy. You only need to take my classic fudgy brownie recipe and my blondie recipe and marry the two together essentially. There are a few tweaks of course.
The first is halving the brownie recipe. These brookies are baked in a 9"x9" square baking pan so we don't halve the brownie mixture, they will spill out all through the oven.

The second is of course adding M&Ms to the mixtures. I also added chocolate chips to the blondie mixture for some more chocolate. This is of course optional.

M&M Brookies
Ingredients
Blondie;
- 90 g Butter, Melted (⅓ Cup and 2 Tbsp.)
- ¾ Cup Brown Sugar (140g)
- 1 Large Egg
- 2 teaspoon Vanilla Extract
- 1 Cup and 2 Tbsp. All Purpose Flour (135g)
- ½ teaspoon Baking Powder
- ¾ teaspoon Baking Soda
- ½ Cup Chocolate Chips (90g)
- ½ Cup M&Ms (110g)
Brownies;
- 90 g Butter (⅓ Cup and 2 Tbsp.)
- 120 g Dark Chocolate (⅔ Cups)
- ½ Cup Brown Sugar (90g)
- ¼ Cup Sugar (50g)
- 1 Large Egg
- ½ teaspoon Vanilla Extract
- ¼ Cup Cocoa (24g)
- ½ Cup All Purpose Flour (60g)
- ½ Cup M&Ms (110g)
Instructions
Blondies;
- Preheat the oven to 180°C (350°F) and line an 9"x9" baking tin.
- Melt the butter and mix the with brown sugar.
- Add the egg and vanilla and beat in.
- Stir in the flour, baking powder and baking soda until all combined.
- Stir in all the chocolate chips and M&Ms and set aside.
Brownies;
- Melt the butter and dark chocolate together.
- Mix the eggs, sugar, brown sugar and vanilla extract together until the mixture becomes a light golden colour.
- Mix in the chocolate mixture.
- Stir in the flour, cocoa and M&Ms until just combined.
- Spread the mixture into the prepared pan in an even layer.
- Pour over the blondie layer on top and spread in an even layer.
- Place in the oven to bake for 20-25 minutes. The top and sides will be set and the middle will have crumbs attached to a skewer inserted but should not be wet.
