Caramel Nutella Cookie Pie is a chewy, chocolate chip cookie pie filled with a homemade creamy caramel filling and a Nutella fudge!
This is decadent and a perfect treat to get you through the week.
You know I love a cookie pie.
The more decadent and over-the-top the better I say!
We use a very simple cookie dough recipe that I use for many of my cookie pie recipes. This is because the cookie bakes soft and chewy EVERY. SINGLE. TIME!
I always say, don't mess with a good recipe and the base cookie dough for my cookie pies is good.
Trust me.
Next we make our caramel filling. This filling has featured in many of my recipes.
I'm not a caramel fan unless its this caramel! It's creamy, buttery and richer than most caramels from the addition of condensed milk.
The caramel also sets which is what we want from a filling.
Finally, we make the Nutella fudge.
Now this is a cheats fudge with just the use of Nutella and sweetened condensed milk. The result is a soft and creamy fudge that will set in the fridge.
Caramel Nutella Cookie Pie
Now you may ask yourself, 'why bother with both fillings?'
Well, you don't have to. You could just use the caramel filling or the Nutella fudge filling and call it a day. But, the two flavours work incredibly well together.
We have the sweet and buttery caramel paired with the slightly richer and creamy Nutella fudge all held together in a chewy chocolate chip cookie.
If that doesn't sound heavenly, I don't know what does.

Caramel Nutella Cookie Pie
Ingredients
Cookie Pie;
- ¾ Cup and 2 Tbsp. Butter, Partially Melted (200g)
- ¾ Cup Brown Sugar (150g)
- ½ Cup Sugar (100g)
- 2 Large Eggs
- 2 teaspoon Vanilla Extract
- 1 Tbsp. Golden Syrup* (22g)
- 2 and ¾ Cups All Purpose Flour (360g)
- 1 teaspoon Baking Powder
- 1 Cup Chocolate Chips (180g)
Caramel Filling;
- ½ Tin Sweetened Condensed Milk (200g)
- ⅓ Cup Buttter (75g)
- 3 Tbsp. Golden Syrup** (66g)
- ½ teaspoon Vanilla Extract
Nutella Fudge;
- ½ Tin Sweetened Condensed Milk (200g)
- ¾ Cup Nutella (225g)
Instructions
Cookie Pie;
- Preheat the oven to 180°C (350 F) and grease a 9″ or 20cm round pie dish.
- Beat the super soft or partially melted butter, brown sugar and sugar together.
- Beat in the eggs one at a time.
- Add the vanilla extract and golden syrup and beat in.
- Mix in the flour and baking powder.
- Stir in the chocolate chips and set aside to make the fillings.
Caramel Filling;
- Place the ingredients in a saucepan over a medium heat.
- Stir and wait for the butter to melt.
- Bring it nearly to the boil then remove from the heat.
- Add the vanilla extract and allow it to cool while you make the Nutella fudge.
Nutella Fudge;
- Place the sweetened condensed milk and Nutella in a saucepan and place over a medium heat.
- Melt them together and then remove from the heat.
- Spread half the cookie dough in an even layer as the the base in the prepared dish.
- Pour over the Nutella fudge and spread into an even layer.
- Pour over the caramel filling and spread into an even layer.
- Top with the remaining cookie dough.
- Place in the oven to bake for 30-35 minutes. The outside will be starting to turn golden but the middle will slightly wobble from the caramel.
- Allow it to cool completely before slicing otherwise the caramel will just run everywhere.
